- 400 gzucchini · coarsely grated
- 3 gsalt · for drawing water out of the zucchini
- 100 gfeta cheese · crumbled
- 2large eggs
- 40 galmond flour
- 2spring onions · thinly sliced
- 10 gfresh dill · chopped
- 5 gfresh mint · chopped
- 1garlic clove · grated
- 30 mlolive oil · for frying
- black pepper · to taste
Steps
- Mix the grated zucchini with the salt in a colander and leave it to drain for 10 minutes.
- Squeeze the zucchini firmly in a clean kitchen towel until very little water comes out.
- In a bowl, beat the eggs, then stir in the zucchini, feta, almond flour, spring onions, dill, mint, garlic and pepper.
- Heat half the olive oil in a large frying pan over medium heat.
- Drop in heaped tablespoons of the mixture and flatten them gently to about 1 cm (½ inch) thick.
- Fry for 3 to 4 minutes per side until golden, then move to a plate lined with paper towel.
- Add the rest of the oil and fry the remaining mixture the same way.
Tip. Squeeze the zucchini harder than you think you need to: dry zucchini is the difference between crisp fritters and ones that fall apart. Leftovers keep in the fridge; to reheat, warm them in the oven at 180°C (350°F) for 8 to 10 minutes.
