A calm weeknight dinner: cauliflower gets a head start in a hot oven, then salmon joins it with lemon, garlic and a little smoked paprika. One tray, very little washing up, and plenty of good fat to keep you full.

Serves 4. About 15 minutes hands-on and 30 minutes in the oven. Let the salmon rest for 2 to 3 minutes before serving.

Fasting: This is a full meal, so it ends a fast. It works well as the main meal of your eating window, and is gentle enough to break a longer fast if you keep the portion moderate.

Ingredients

  • 600 gsalmon fillets · 4 pieces, skin on or off
  • 600 gcauliflower · cut into small florets
  • 45 mlolive oil · divided
  • 3garlic cloves · finely chopped
  • 1lemon · zest and juice
  • 2 gsmoked paprika
  • 2 gground cumin
  • 15 gfresh parsley · chopped
  • salt · to taste
  • black pepper · to taste

Steps

  1. Heat the oven to 220°C (425°F) and line a large baking tray with baking paper.
  2. Toss the cauliflower with 2 tablespoons of the olive oil, the paprika, cumin, salt and pepper.
  3. Spread the cauliflower on the tray in one layer and roast for 15 minutes.
  4. Meanwhile, mix the remaining olive oil with the garlic, lemon zest, half the lemon juice and a pinch of salt.
  5. Pat the salmon dry and brush the tops with the garlic and lemon mixture.
  6. Push the cauliflower to the sides, place the salmon in the middle and roast for 12 to 15 minutes, until the fish flakes easily.
  7. Rest for 2 to 3 minutes, then squeeze over the rest of the lemon juice and scatter with parsley.

Tip. Cut the cauliflower into small, even florets so it browns in the time the salmon takes; large pieces stay pale and soft.
