Ingredients
- 27 golive oil
- 30 gonion · finely chopped
- 60 gred bell pepper · diced
- 2garlic cloves · thinly sliced
- 2 gground cumin
- 2.3 gsweet paprika
- 250 gripe tomatoes · chopped
- salt and black pepper · to taste
- 4large eggs
- 50 gfeta cheese · crumbled
- 10 gfresh parsley · chopped
Steps
- Warm the olive oil in a medium frying pan over medium heat.
- Add the onion and red pepper and cook for 5 minutes, stirring now and then, until soft.
- Stir in the garlic, cumin and paprika and cook for 1 minute until fragrant.
- Add the tomatoes with a pinch of salt and pepper. Simmer for 8 to 10 minutes, until the sauce is thick and jammy.
- Make 4 small wells in the sauce with a spoon and crack an egg into each one.
- Cover the pan and cook on low heat for 5 to 7 minutes, until the whites are set and the yolks are still soft. If you use a thermometer, the whites are set at about 63°C (145°F).
- Take the pan off the heat, scatter over the feta and parsley, and rest for 2 minutes before serving.
Tip. If your tomatoes are pale or watery, simmer the sauce a few minutes longer before adding the eggs, so the eggs sit on top instead of sinking.
